Pumpkin Chocolate Chip Cookie Pie

Yesterday was a long but totally productive day! I love getting stuff done. Since my girls didn’t have activities after school it was perfect for doing a little shopping. It is super hard for me to get into the Christmas spirit until after Thanksgiving. I really like to enjoy each holiday and I need to pay homage to the turkey! While many other blogs are showing Christmas stuff I am not quite there yet (next year I will start earlier). I did start a little Christmas shopping yesterday and I was happy to get that started.

Okay, let’s talk pie.  This Pumpkin Chocolate Chip Cookie is super easy and oh sooooo good!

Pumpkin Chocolate Chip Cookie Pie

makes one 9-inch pie

2 large eggs

1/2 cup all-purpose flour

1/2 cup granulated sugar

1/2 cup packed brown sugar

1 cup butter, melted and cooled to room temperature

1/3 cup pureed pumpkin

2 teaspoons vanilla extract

1 tablespoon + 1 teaspoon pumpkin pie spice

1 cup chocolate chips

1 unbaked pie shell

whipped cream or ice cream

Preheat oven to 325 degrees F.

In the bowl of an electric mixer, beat eggs until foamy. Beat in flour, sugar and brown sugar until well blended. Add in vanilla extract, pumpkin and pumpkin pie spice and mix until combined.. Blend in melted butter. Toss chocolate chips with a sprinkling of flour and fold into batter. Pour into an unbaked 9-inch pie shell. Bake for 55 minutes, or until center is no longer jiggly.

Serve warm with ice cream of whipped cream.

This pie was the bomb! It’s cookie like but cakey at the same time. Try it…you’ll love it. If you are not a pie lover this one will change your mind. It will be a hit with the adults and the kids!
