Perfect Chocolate Brownies, Leftover Carnitas and Teacher Appreciation

Remember last week when I shared the Crockpot Mexican Carnitas? Have you made them yet? If you have and you have left overs how about making a Chipotle like bowl? All you have to do is layer your ingredients. I used brown rice, black beans, carnitas (all heated up of course!), shredded lettuce, tomatoes, cilantro, salsa, a bit of cheese and a little sour cream. It was delicious!

I don’t make brownies that often but a few weeks ago I wanted to practice my icing flower skills so I figured I would use brownies to practice on and to share with my co-workers. Unfortunately, my friends and I ate the first batch I made when our area was flooded and we didn’t have school. I did make a second batch to take for my co-workers the following week. Anyway, they were by far the best brownies I have ever had!

These brownies were so fudgy and delicious! I think this will be the recipe I will always use. My flowers didn’t come out so bad either!

Perfect Chocolate Brownies

1 1/4 cups all purpose flour
1 teaspoon salt
2 tablespoons unsweetened Dutch Process cocoa powder
11 ounces dark chocolate, roughly chopped (I used Ghiradelli)
1 cup (2 sticks) unsalted butter, cut into 1-inch chunks
optional: 1 teaspoon instant espresso powder
1 1/2 cups granulated sugar
1/2 cup packed light brown sugar
5 eggs, at room temperature*
2 teaspoons vanilla extract

*Before you start the recipe, place eggs in a shallow bowl filled with warm tap water to bring to room temperature.

Preheat oven to 350 degrees.  Butter a 9×13 inch baking dish and set aside.

In a medium sized mixing bowl, combine flour, salt, and cocoa powder and gently whisk together.

Using a double boiler (place a glass mixing bowl on top of a pot of simmering water) melt chopped chocolate, butter, and instant coffee (if using).  Stir until melted and smooth.  You could also do this step in the microwave if you’re careful and heat it gently in 30-60 second intervals, stirring after each interval.

Remove glass bowl from the double boiler and add granulated and brown sugars.  Whisk until smooth.  As you whisk, the mixture should  cool off, eventually coming close to room temp.

Add 3 eggs to the chocolate mixture and whisk until combined.  Add the remaining 2 eggs and vanilla, and continue whisking until just until everything is incorporated.  Don’t overmix at this stage.

Sprinkle flour mixture into chocolate mixture and use a rubber spatula (don’t use electric beaters, and not even a whisk) to fold and stir flour mixture just until incorporated.  You can even stop stirring when you still see just a few visible bits of flour are showing.

Pour batter into prepared pan and smooth out evenly.  Bake for 25-30 minutes, rotating the pan halfway through baking time.  Remove from oven when a toothpick comes out of center with a few crumbs still attached.  Cool completely (the hard part!) and then cut into squares and serve.

These brownies were pure perfection!

On another quick note…This week is Teacher Appreciation week. Yay for our teachers! Working in a school office I see all the time, dedication and caring that our teachers put into their profession. They are probably the person our children spend the most time with. They are truly valuable individuals worth celebrating! I sent my daughter to school with some wrapped chocolate bars (I hope she doesn’t eat them!) and some hand-made cards in decorated bags for some of the school faculty. I am truly appreciative of all they do.

If you do anything for your child’s teacher just say “Thank you”. Let them know that you value them!

Pumpkin Pie Tamales

Felíz Miercoles! Why is this week going by so slow?? It must be the dreary weather here…and we are supposed to get snow showers at the end of the week. Really? Oh well!

Let’s talk about tamales! Tamales are delicious and  they can be made sweet or savory. Where my family is from tamales are usually made with a pork and red chile filling with a some red chile sauce in the masa to give it more flavor. My mom makes some awesome tamales!  They are usually made at Thanksgiving, Christmas or for other special occasions. I love to eat tamales but I’ve never made them because they are so much work. I have helped my mom assemble them but have never made the actual meat filling or masa.

I finally found the courage over spring break to make sweet tamales. I made them after my crochet lesson that taught me that crocheting is NOT for me! I had the whole evening to make a mess in the kitchen so why not? I found a wonderful recipe for Pumpkin Pie Tamales on this wonderful blog http://sweetlifebake.com/  It helped that I absolutely love pumpkin! The result was excellent! And how do I know that? Because my Papí approved!

I made my own primitive tamalera (pot for steaming tamales) as you can see in the corner picture. My spreading technique wasn’t perfect, but it will get better!

My Papí is a very picky eater. My whole life he only would ever eat at home or certain foods. Comida casera (home made food that my mom makes), shrimp fried rice and sausage pizza-thin crust only. When it comes to poultry he only eats fried chicken drumsticks-no other part of the chicken and not cooked any other way or with anything else. Oh and no turkey! I don’t ever remember him ever eating at my grandmother’s house-super weird! When I got married he was afraid to try my cooking – slowly but surely I convinced him that I would not kill him. Now he eats everything I cook. When I gave him these delicious tamales I forgot to ask him how they were. Last night when he came over he said “Flor, the tamales were really good. I only had one but it was rico”. Well, he really liked them! That’s all I needed for my first time making tamales-my Papi’s ok!

There are all sorts of tamales to make…sweet ones made out of pineapple, strawberry, chocolate and more sweet flavors. There are also many kinds of savory tamales made out of cheese, chicken, poblano and more. I told my Papí that this is just the beginning of the tamale making…I just need to get brave enough to make the savory ones!

Sweet Potato Muffin Donuts

So the fall craze is in full swing here at my house. Every baked item I’ve made has a fall flavor to it. I just can’t help it.

These muffin donuts were delicious! The original recipe was for pumpkin donut muffins but I didn’t have any pumpkin thawed so I used sweet potatoes that I didn’t know what to do with.

I baked them in my vintage jello molds so that they would have a cute twist to them. I called the “bottom” of them the “butt side”…just because they are puffy!

Look at the beautiful twisted top of these beauties! Don’t mind my ugly baking sheet!

They were even more gorgeous dipped in the butter and cinnamon sugar!

These were sooooo good with a glass of milk!

Sweet Potato Muffin Donuts

Ingredients

1/3 cup pureed sweet potato (no spices added)

1/2 cup white sugar

1 egg

1 1/2 cups flour

1 1/2 tsp. baking powder

1/2 tsp.  salt

1/2 tsp. nutmeg

1/2 cup milk

Dipping Ingredients

1/2 cup butter

1/2 cup sugar

1 Tbsp. cinnamon

Directions:
Pre-heat oven to 325.
In a medium sized mixing bowl, cream pumpkin, sugar and egg. Add dry ingredients and mix until mixture is thoroughly combined. Add milk gradually while mixing. Using ice cream scoop, Fill 8 greased muffin tin holes. Bake  for about 20-25 minutes or until golden.

Combine dunking sugar and cinnamon together in a bowl. Melt butter in a bowl.Dip warm muffins in melted butter and then right into the cinnamon sugar.

Paletas de Jamaica

A couple of weeks ago I made a big vitrolero full of agua de jamaica. It was cold and delicious. Unfortunately, I had lots left over!

This is my beautiful vitrolero filled with the agua de jamaica before I accidentally broke it…

All I did was add a bit of fresh lime juice to the left over agua de jamiaca and put it in ice pop molds.

I truly believe there is nothing wrong with being frugal. Being cheap is a totally different thing! If you have something that can be turned into something else…why not? You might end up with a yummy summer treat!

Sew Sweet

HI!

Finally Saturday! Today I am not sleeping late…I am doing something fun and with my best friend! The Wilton Tent Sale! Baking stuff galore! OOOHHHH I love it so! I don’t need anything, but I am sure I will find something that I cannot live without. They have so many things at such great prices. The only thing is trying to steer clear of having your heels hit with carts every second!

Sometimes when I make scrap book pages I make them in advance without having the picture I am going to use in the layout. I want to take advantage of my scrap booking mojo whenever I have some. Once I have my pictures then I decide which one fits well with my layout  or I will print the pictures in the sizes that will best fit the layout.

I made this page quite a while ago but just found the picture that worked well with it. These pictures are perfect because everyone in  them are “sew sweet”. I know…I’m a nerd!

Sweet Graduation

Hola!

Here we are Friday again! I am waiting for the weather to get really nice again. We had to turn our heat back on a bit back and I can’t wait to turn it off and open all our windows!

As I’ve mentioned before my middle child will be graduating from high school this year. She is super excited! I am happy, scared, nervous…everything all together. We have purchased her prom dress and are in the process of having an embellishment added then we will be shoe and accessory shopping so she can be all fancy for her prom. Then it’s here…graduation. A turning point in every young persons life.

Graduation was the theme for our swap this month. This was my graduation card. Girly yet sweet.

We are visiting the college that my daughter will be attending in the fall this weekend. I am excited because my best friend and brother will be coming with. It’s going to be a blast! It will be nice to see where I will be leaving my daughter in August to start her college education. Excitement!

Hola!

Hello, Friday! I am still feeling crooked! I can’t bend my head/neck to the right or left without pain. I can’t lie flat on my back…I think it’s time to go to the doctor! I feel like my head is too heavy for my neck. But I think that might be from all the ideas Pinterest has given me and they are just sitting in my head waiting to be created!

There’s been a lot of talk about the movie “The Vow”. This seems like the perfect weekend for it to come out. I must live in a cave because I have never even heard of Channing Tatum? Who the heck is he? I think I will try and go see it anyway. It looks like a good chick flick…I don’t know if I should ask my husband to go or my girlfriends…hard decision!

Speaking of girlfriends. This card is perfect for your best girlfriend for Valentine’s! After all I truly believe Valentine’s is not only about Love but about Friendship too!

I am a big pusher of friendship! Sometimes it’s hard to tell your best friends how much you love them! So just go ahead and write it in a cute card for them!
