Cilantro Lime Rice



Another thing I love…rice! I really enjoy rice and can make a meal of just the rice itself. It’s definitely a staple in my house. Remember the Pumpkin Seed Encrusted Baked Tilapia from yesterday? I served the Cilantro Lime Rice with it and they were perfect together. As my daughter said “This is so fresh tasting”.

Here’s the recipe for it from It’s based on the rice that you can get at Chipotle’s.


  • 1 cup extra long grain rice or basmati rice
  • 1/2 lime, juice of
  • 2 cups water
  • 1 tsp salt
  • 3 tbsp fresh chopped cilantro
  • 3 tsp vegetable oil


In a small heavy pot, add rice, water, 1 tsp oil and salt. Boil on high until most of the water evaporates. When the water just skims the top of the rice, reduce to low andcover about 15 minutes. Shut off flame and keep covered an additional 5 minute.

In a medium bowl, combine chopped cilantro, lime juice, rice and remaining oil and toss until completely mixed.

On another note…today is my baby’s 11th birthday. I can’t believe that she is 11! Time has flown by. I love her for so many reasons (plus many more): She’s cute, she’s funny, she is independent, she can definitely defend herself…so watch out. She is also the best cuddler ever!  This is her on Halloween…she is much more beautiful under that mask!
