Chocolate Eclair Cake



I don’t know about you guys but sometimes in the summer I do have a hard time deciding what kinds of desserts to make. If it’s too hot of course I don’t want to turn the oven on. Since it’s obviously usually hot in the summer I like making light desserts but sometimes I also want chocolate!  Sometimes you need something in the middle!

This dessert is light airy, but also nice and sweet and of course chocolately!

I love this easy but sweet dessert! You cannot go wrong with this Chocolate Eclair Cake!

Chocolate Eclair Cake


  • 2 small packages French Vanilla instant pudding
  • 1 package of graham crackers
  • 3 cups milk
  • 8 ounces Cool Whip
  • 1 container of chocolate frosting


Grease a 9×13 pan with butter or non-stick spray. Cover the bottom of the pan with a layer of graham crackers. Then, make the pudding by mixing milk with the pudding mix for two minutes. Slowly add in the Cool Whip with the pudding. Add the pudding/Cool Whip mix on top of the graham cracker layer. Continue with this graham cracker/pudding pattern until you reach the top of the pan. When you’re at the top, heat frosting for 30 seconds in the microwave and spread it on top of the uppermost layer of graham crackers. Let the cake chill in the fridge overnight.

This was so good! It keeps really well in the fridge so make an extra pan!
