Testing! Testing!



Yes, I’m still alive! I’ve been gone for a while..life is just busy, busy!

Let me catch you up a bit!

So I had my foot surgery on my right foot in June and it’s feeling so much better now than it was before.

I had a great vacation with my family this year!


Who wouldn’t think that sunset is beautiful! That’s actually some of my family. One of my favorite things during vacation was eating the Cuban Sandwich I fell in love with last year.


I love those sandwiches so much that I would fight for them!

We went to a few new restaraunts this summer too. I’ve done a lot of eating and I am not proud of it but it was soooo good!


We went to two weddings and a Quinceañera this summer that were fabulous and fun!

After my summer break I went back to work and literally felt like I had the flu or have been dragged by a truck. It takes quite a while to get used to being on a schedule again. But I’m on schedule now and trying to be productive. It’s hard when all I want to do is come home and take a nap after work!

I even did a 5K along with my daughter and my husband. I didn’t run but am happy that I made it walking!


Fall is here and I am loving the weather and waiting for one of my siblings who has young kids to invite me pumpkin picking! I love pumpkins!

Yesterday I had some appointments and we stopped to have lunch at a Puerto Rican restaurants in Chicago.img_5142

OMG! This mofongo with shrimp in red sauce was amazing. If you like Puerto Rican food go to Ponce in Chicago. It’s a small place but has delicious food and the staff is super friendly! We are definitely going back.

Ice Cream Cone Birthday & Weekend Wanderings



Mother Nature is playing with my emotions. I get teased for a few days and I get to wear some peep toes shoes. The next day I am wearing boots again. Please, Mother Nature send me some really nice weather that will stay for a long while. I’m done with the teasing!

It has been busy and also lazy here. Some days are pretty busy others I find myself just laying around!

Last weekend we went to a food truck festival. I learned about it on facebook and have always wanted to eat food from a food truck. Why? I don’t even know.

I thought the food was a little pricey. This was a sampler from an asian food truck. It included a Lemon Grass Chicken Taco, Pork Belly Slider and Filet Mignon Slider. The chicken was delicious! It had such a fresh taste. The pork belly was not my thing! I don’t like gooey fat. The beef slider was ok. More than anything this sampler just looked pretty!

I had to have a Lobster and Crab Roll so I waited almost two hours in line. It was funny because for the first hour everyone was real chatty and happy. When we were in the second hour a lot of people around us stopped being so happy (including us) we just stood there quietly because of the long wait and in my case my feet were killing me! And I felt that the rolls were just OK. My husband only took one bite out of the lobster roll.

The lines, OH, the lines! I waited 2 hours for some jerk chicken that truthfully would have tasted better if I had made it at home. I was so crabby by the time we got the jerk chicken that I didn’t even take a picture of it.

I have experienced a food truck festival and will never go again. I sound like a big downer. Maybe I’m too old for that kind of thing…NAH! It was the long waits in line that made me the most unhappy. It was nice to get home and put my feet up!

A while back I made this birthday card but I don’t think I ever posted it so here it is. Isn’t it cute?

I like the gatefold card because of the way it opens up. Just a little different than the everyday card.

Spring Break 2014



I hope everyone enjoyed their weekend. I enjoyed my weekend and my whole week off. Now it’s back to work! I ate so much over break that I should be thrilled to get back on a schedule.

Last Monday we went to Geneva since the weather was warm.We did a little bit of window shopping and just enjoyed being together. That’s when all the eating really started. We ate at the Oldetowne Pub. The food there is delicious. Whenever we are in Geneva we always eat there!

This burger was delicious and beautiful! You can see my Bloody Mary in the background!

I just love the great shopping in Geneva.

Tuesday we went to the mall with my brother and sister in law to have my nieces picture taken with the Easter Bunny.  She is too cute. On our way home me and my girls stopped for KFC. It was too good!

Wednesday was a quiet day at home.

Thursday we went to check out Eli’s Cheesecake Factory. We saw a short presentation and we all tasted several cheesecake samples. Of course we had to have lunch there too. The sandwiches there are delicious and the people there are so nice. We even met the owner.

How can I say no to this Cuban sandwich?

Thursday evening Eddie and I went to Danny’s Place for Italian food. I had Giambotta, an Italian Stew with chicken, pork, sausage and vegetables in a red sauce. OMG! It was soooo good!

The portion was huge! I ended up taking half of it home.

Friday was another quiet day at home doing some crafting.

Saturday Eddie and I went out to dinner with some of my cousins  at Molly Malone’s and of course delicious food was involved. I had the Bangers and Mash. I’d never had anything like it before.

My cousin had the Chicken Pot Pie. She is hilarious. She said “Flor, do you want to take a picture of my dinner before I start eating?” Don’t mind if I do! Thanks!

I just wanted to lay my head on that puffy pastry pillow!

By yesterday we were kind of done with eating out! There is only so much eating out we can do. When we visited my parents yesterday I actually turned down food from my favorite Chinese restaraunt!

All in all it was a relaxing spring break full of food! I will definitely be cooking all this week to combat all the eating out that we did.

Chocolate Cake with Peanut Butter Frosting and Fun!



Happy Monday! I guess it’s a happier Monday for those of us who are off today for Presidents Day! I hope everyone enjoyed their weekend. I had a pretty good one! I finally went out somewhere other than the grocery store or my parents house.

We went to the Chicago Auto Show on Friday and the cars were amazing! This was the first time we’ve been to the auto show and let me tell you it made me want to zoom away in all the awesome cars!

I just could not believe the prices of some of the cars! 455,000? really? for a car? I could really see 007 and myself in one of these cars! We had a really good time.

Saturday we went to my brother and sister-in-laws house to celebrate my brother’s birthday. It’s so much fun when we all get together and there is always some really good food. My sister-in-law is an awesome cook. Sadly for me I only had a little bit of everything since I am watching what I am eating, but it was soooo good!

If  only food were fat-free…

I made my brother’s birthday cake and believe it or not it is the fanciest cake I have ever made. I am not a good cake decorator at all!

The frosting on this cake was divine! I should have said “No” to cake but I had to taste it! It was sooooo goood! Chocolate and Peanut Butter just go together like Elvis and Ann Margaret (Yes, Priscilla, I said Ann Margaret!), Lucy and Ricky, Juan Gabriel and Rocío Durcal, Wisin and Yandel…you get the picture!

Just make your favorite chocolate  double layer cake recipe and use this frosting recipe.

Peanut Butter Frosting


2 sticks of room temperature butter (1 cup)

1 cup of cream peanut butter

2 cups of confectioners sugar

2 tbs of half and half

DirectionsIn the bowl of an electric mixer, beat butter and peanut butter until creamy. On medium/low-speed add in powder sugar than half and half until it is smooth.

Frost cooled cakes. Lick the beaters and the pan. Do not waste any frosting.

Sunday was a quiet day of catching up on housework and today maybe we will take in a matinee movie. I wish every weekend was like this one-a nice combo of going out and being home!

Scrapbook Saturday-Family Favorites




Spring break has ended on a cool note. Yesterday was pretty chilly, but hopefully today and tomorrow will be a bit nicer! Yesterday I took my oldest daughter to have a physical done so that we can send the paperwork on to her university. It has been a bit emotional this past week for me. I’ve put away the kids stuff into their bins and cried like a baby! All those little things that were used by them have so much meaning to me…It’s been hard knowing that so much time has passed when it just seems like yesterday that they were all babies. But I try to always be a positive thinker and feel that there are wonderful things in store for my children!

On a happier note…food! Family favorites! Everyone has their own personal favorite food and then there is a food that is an all around favorite with my kids. They all super love “Pata de Puerco con Frijoles y Papas” (Pig feet with beans and potatoes). I just want to clarify that I don’t actually use the pig foot in this recipe. I like to use chunks of delicious pork. My mom used to make this and it was one of my favorites and now I make it for my family. I don’t have an actual recipe. It’s more like a bit of this and a bit of that type deal.

I decided to make a scrapbook page that highlights some of my kids favorite things…

I really enjoy cooking for my family and can never say “no” when they ask me to cook their favorite food…I’m a sucker like that!

Horchata is awesome! ItIt’s not kind on the waist but tastes oh so good. This drink is especially good in the summer. I haven’t made it this year yet, but as soon as I do I will post the recipe.

My oldest daughter loves chili mac. I like making it cause it’s quick and easy!

I like using little pockets as embellishments and to place my journaling cards. It also give me a place to hide my ugly handwriting! Does your family have favorites? I would love to know what they are!
