Fresh Raspberry Vinaigrette

Hola!

My whole life I have had an aversion to eating savory foods with sweet additions such as eating pork with applesauce-which i still have never tried. I also couldn’t get why people would eat salads with fruits/berries such as blueberries, strawberries, raspberries, etc.

Just a few weeks ago I tried my first salad with fresh berries and a raspberry vinaigrette. I was amazed at the flavors. Of course I had to run out and get the ingredients for a salad and a raspberry vinaigrette. This was the result.

This is a  beautiful, creamy, pink, sweet yet savory dressing that is currently my favorite. The salad with the dressing is absolutely delicious an beautiful too.

For the salad I just tossed some spinach on the plate and topped with fresh raspberries, some toasted, sliced almonds, some feta cheesed and then dressed with the vinaigrette. This is a total winner!

Fresh Raspberry Vinaigrette

Ingredients

  • 1/2 cup fresh raspberries
  • 1/4 cup red wine vinegar
  • 1/4 cup honey
  • 1/2 cup olive oil
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Directions

  • Purée raspberries with vinegar and honey in a food processor ,blender or in a medium bowl using a hand blender until smooth. While puréeing, add olive oil in a slow, steady stream. Blend until combined.
  • Season with salt and pepper. Store leftover dressing in the refrigerator for up to 2 weeks.

This was adventurous for me and I am so glad I tried it!

Fresh Strawberry Ice Cream

Hey!

OMG! I made the most delicious ice cream ever! At least I thought it was the most delicious ice cream ever! I hope you feel the same way.  I have not made all that much ice cream. I am slowly getting more experienced at using my ice cream maker. This ice cream was smooth and creamy. The only thing I would change would be to chop the strawberries instead of slice them.

I had made this the day before my whole family came over and I felt bad that there was not enough for everyone. I would need to double or triple the recipe to have enough for everyone.

I was kind of inspired to make ice cream by the cute container that it’s in. My friend and I had taken a trip to Williams Sonoma and  Sur La Table one weekend.We could spend hours in these stores!  I found this container at  Sur La Table. I bought two of them each with different color lids. They also have them on Amazon. They are just so cute!

Fresh Strawberry Ice Cream

Ingredients

  • 2 cups heavy cream
  • 1 cup milk
  • 1 can sweetened condensed milk
  • 1/4 cup sugar
  • 1-2 cups strawberries, cleaned and sliced

Directions

With a whisk, combine all ingredients except strawberries, just until frothy. Freeze for 45 minutes. Remove from freezer and gently whisk again to stir. Pour into Ice cream maker and freeze according to machine’s instructions. Approximately 10 minutes before machine is done churning, add in strawberries. Finish churning then transfer ice cream to freezer container and freeze for 4 hours or overnight.

I have noticed that I stay away from making ice cream that has eggs in it. I just figure it will save some calories? As long as the ice cream is good I don’t have a problem not using the recipes with eggs.

Mango Salsa

Hola!

With summer winding down I’m trying to enjoy the last bounty of delicious flavors that summer offers. 

My  husband loves Costco. He is there at least twice a week. Doing what? I don’t know. I think he goes to buy just one thing at a time so that he can keep going back. I have never in my life had mango salsa. My husband tasted it at Costco and was raving about it. So being the great wife I am I decided to make some at home for him. I can have that opinion, right?

I love the taste of mangos but hate the messiness so needless to say that I don’t eat them that often at home. I will eat them when we go out if they are already prepared and ready to eat. I loved the sweet but fiery taste of this salsa. There are no exact measurements to this salsa so just add as much or as little of each ingredient as you would like.

 

Mango Salsa

Ingredients

  • Finely chopped mango
  • Finely chopped purple onion
  • Finely chopped jalapeño or serrano peppers (remove seeds and veins if you want less spice)
  • Cilantro-chopped
  • Lime (optional)
  • Tiny bit of salt

Mix all ingredients together and enjoy with tortilla chips or anything you really want! Refrigerate leftovers and eat asap!

You can’t really get any fresher or easier than this!
